		<description>Thanks for that pork belly recipe, Matt.  It was quite perfect.  Soaking it in salt water made a huge difference. I put it in the oven at 425 for 45 minutes and then 325 for 2 hours.  I think for the next pound I might reverse the process and do the high heat at the end to see how that changes it.</description>
